CAJUN CATFISH WITH ROASTED PECAN BUTTER
1 lb fresh catfish fillets
flour to coat
Cajun spice mix - enough to coat fish - Add as much as you dare
1oz.Olive oil
1/2 cup - roasted and chopped pecans
4oz. - softened whole butter
1/4 - onoin - diced and sauted until limp
1/2 Tbl. - chopped parsley
Add to the butter; pecans, onoin, parsley - set aside. Season
catfish fillets with cajun spice and dredge lightly in flour. Pan
fry fillets in olive oil 3 - 4 min on each side. Top with butter
and serve.
