    COLLEEN'S IRISH CODDLE

    List of Ingredients

    6 slices (1/4-inch thick) ham
    or bacon, cut into chunks
    1/2 lb. smoked pork sausage,
    cut into 1-inch chunks
    3 c. boiling water
    2 large onions, sliced
    3 Tbsp. fresh or dried parsley
    1 1/4 lb. potatoes, peeled and
    thinly sliced
    1 tsp. salt
    1/4 tsp. black pepper

    Boil ham or bacon and sausage chunks in 3 cups boiling water.
    Drain and reserve liquid. Put meat into an 8-inch square or 2 quart baking dish. Cover with sliced onions and potatoes and chopped parsley. Sprinkle with salt and pepper. Add enough of the reserved liquid to cover. Place a large pieces of waxed paper over top. Cook in oven at 300 degrees for 1 hour or until liquid is reduced by half and all ingredients are cooked but not mushy.
    Serve hot with vegetables on top and homemade bread.
