PAT'S IRISH POTATO CAKE
List of Ingredients
4 eggs
1 1/2 c. sugar
1 c. nuts
1 tsp. vanilla
1 tsp. cinnamon
2 c. plain flour
1 c. mashed warm potatoes
3/4 c. vegetable shortening
1 c. raisins
2 Tbsp. cocoa
2 tsp. baking powder
Icing:
1 box xxx sugar
1 stick margarine
2 Tbsp. cocoa
1 tsp. vanilla
pinch of salt
enough milk to spread
Recipe
Cream shortening and sugar; add vanilla. Add one egg at a time to the creamed sugar and shortening.. Sift flour, cinnamon, cocoa and baking powder together and then alternately dry ingredients and potatoes to creamed mixture. Soak raisins a few minutes in cold water. Drain water and add nuts to raisins and a little flour to batter, beating and mixing well. Bake in 2 layers at 350 degree for 30 to 40 minutes.
For the icing:
Add milk to sugar, margarine and cocoa. Add vanilla and salt. Wait until next day to cut.
