Chicken, Apricot, and Ham Lollipops

Jon makes me make this recipe pretty much whenever we have company.
List of Ingredients
- 1 1/4 cups apricot jam
- 2 Tb dijon mustard
- 3 cups bread crumbs
- 1 lb chicken tenders (about 16 pieces)
- 16 bamboo skewers soaked in water for 30 minutes (note: the recipe says to soak them - I think it prevents scorching. I've never soaked them - don't have the patience for it. So my skewers scorch and it's no big deal except it probably doesn't look as pretty.)
- 8 oz deli ham, halved crosswise
Instructions
- Preheat oven to 450 F. Lightly oil a large baking pan.
- Reserve 1/2 cup jam. Stir together the remaining jam and mustard for the dipping sauce.
- Spread the bread crumbs on a plate.
- Thread each piece of chicken lengthwise onto its own skewer. Wrap each with a piece of ham, and then brush with some of the reserved jam. Roll in bread crumbs, pressing with your fingers to stick it on as needed.
- Arrange the skewers onto the pan.
- Bake, turning once, until bread crumbs are golden and chicken is cooked through, about 20 minutes.
