    Baked Chicken and Cheese Risotto

    Recipe Introduction


    Now you too can make the coveted risotto. I shared my secrets with you, now it's your turn to teach me what "foo-lay" is. *wink*


    List of Ingredients


    • 2 cans Campbells condensed cream of mushroom soup
    • 2 1/2 cups water
    • 1 cup milk
    • 1/2 cup shredded mozarella cheese
    • 6 tsp grated Parmesan cheese
    • 1 bag frozen mixed vegetables
    • 1 lb skinless boneless chicken breasts, uncooked, and cut into cubes
    • 1 1/2 cups uncooked Arborio rice


    Instructions


    1. Mix all ingredients in a greased 9X13 baking dish. Cover with foil.
    2. Bake at 425 for 45 minutes. Stir.
    3. Bake for about another 30 minutes uncovered until rice is cooked through and the liquid mostly absorbed.


    Final Comments


    This makes a ton. Prepare to be eating on this for DAYS.
