    Alissas Lemon Pound Cake

    I combined a couple of recipes to come up with this one.


    Recipe Introduction


    Mouse once ate an entire pound cake all by herself. That proves it's good.


    List of Ingredients


    • Cake:
    • 2 1/2 cups flour
    • 1 3/4 cups sugar
    • 2 1/2 tsp baking powder
    • 1/2 tsp salt
    • 3/4 cup milk
    • 1 cup sour cream
    • 3/4 cup unsalted butter, melted
    • 2 tsp lemon extract
    • 4 large eggs
    • Glaze:
    • 2 1/2 cups confectioners sugar
    • 1/3 cup lemon juice


    Instructions


    1. Cake: Heat oven to 325 F. Grease and lightly flour bundt pan (note: this is important - I forgot to do this once and it was a horror show).
    2. With a hand mixer or a Kitchen Aid on low speed, blend all cake ingredients together until just blended. Next, beat on medium speed 3 more minutes. Pour mixture into pan. Bake 40-50 minutes until a toothpick inserted in the middle comes out clean.
    3. Glaze: Whisk 2 cups confectioners sugar w/lemon juice until smooth. Set aside 1/4 of this mixture for later.
    4. With cake still in bundt pan, poke holes in the bottom of the cake with a skewer.
    5. Pour 1/2 (minus original 1/4) of the mixture over the bottom of the hot cake. Let stand for 15 minutes.
    6. Invert cake onto serving plate and brush tops and sides with remaining 1/2 glaze mixture. Let cool.
    7. Blend remaining 1/2 cup confectioners sugar with reserved glaze until smooth and pourable. Add a little water if needed. Drizzle over the top and sides of the cake.
