Stuffed Peppers

My mom always made this for my dad. I never liked the normal stuffed peppers because I didn't like green peppers, but she always made extra stuffing for me, and I did like that. Now that I'm old enough to cook for myself, I use red peppers instead of green, but I still like the extra stuffing best of all.
List of Ingredients
- 4 bell peppers (red or green - I like red)
- 1 lb ground meat (traditionally you would use hamburger meat, but I have found that ground chicken is also very good)
- 1 large tomato, diced (or 1 can diced tomatoes)
- 1 large onion, diced
- 1 cup cooked rice (the original recipe used white rice, but I have found that brown rice is just about as good)
- 1 can tomato sauce
- paprika
- parsley
- salt & pepper
Instructions
- Pre-heat oven to 350 F
- Cut the tops off of the peppers and remove the core and seeds. Parboil the peppers for 5 minutes.
- Brown the meat for about 5 minutes. Add diced onion and continue browing meat until done. Drain.
- In a large bowl, combine meat, rice, tomatoes, tomato sauce. Add seasonings to taste.
- Spoon meat and rice mixture into hollow, upright peppers.
- With any luck, you should have some extra "stuffing". Put extra stuffing in a greased casserole dish.
- Bake stuffed peppers (and extra stuffing) at 350 F for about 30 minutes.
