    My mom always made this for my dad. I never liked the normal stuffed peppers because I didn't like green peppers, but she always made extra stuffing for me, and I did like that. Now that I'm old enough to cook for myself, I use red peppers instead of green, but I still like the extra stuffing best of all.


    List of Ingredients


    • 4 bell peppers (red or green - I like red)
    • 1 lb ground meat (traditionally you would use hamburger meat, but I have found that ground chicken is also very good)
    • 1 large tomato, diced (or 1 can diced tomatoes)
    • 1 large onion, diced
    • 1 cup cooked rice (the original recipe used white rice, but I have found that brown rice is just about as good)
    • 1 can tomato sauce
    • paprika
    • parsley
    • salt & pepper


    Instructions


    1. Pre-heat oven to 350 F
    2. Cut the tops off of the peppers and remove the core and seeds. Parboil the peppers for 5 minutes.
    3. Brown the meat for about 5 minutes. Add diced onion and continue browing meat until done. Drain.
    4. In a large bowl, combine meat, rice, tomatoes, tomato sauce. Add seasonings to taste.
    5. Spoon meat and rice mixture into hollow, upright peppers.
    6. With any luck, you should have some extra "stuffing". Put extra stuffing in a greased casserole dish.
    7. Bake stuffed peppers (and extra stuffing) at 350 F for about 30 minutes.
