Daves Chicken Pesto Pasta

- 1 lb Chicken breast strips
- 2 peeled garlic cloves
- 2 tablespoons olive oil
- 4 tablespoons white wine or lemon juice
- 1 small bunch of parsley, or 1 teaspoon of dry parsley flakes.
- Salt & pepper to taste.
- Pesto:
- 3 handfuls of basil (2 small packages at the grocery store, or a little under 1 large package. Pluck the leaves off the stems.)
- 1 small package of pine nuts
- 1/2 Cup parmasean cheese
- Juice from 1 small lemon
- 2 peeled garlic cloves
- Salt & Pepper to taste
- 1/2 cup olive oil. (you may need a little more)
- Half a package penne pasta
Instructions
- Boil and prepare the penne pasta. While pasta is cooking, heat oil, garlic and parsley in a large skillet over medium heat. Add chicken and salt and pepper. Let brown on one side. Flip chicken over and add half the wine or lemmon juice. Keep turning over medium heat until done adding the other half of wine or lemon juice. When pasta is done, drain and set aside.
- To make pesto, put pine nuts in small skillet on the stove over medium heat to toast stirring often. Once they begin to show a little brown color remove from heat. Put all ingredients for pesto in a food processor or blender and blend on medium setting. Check to see if you need more olive oil.
- In the large skillet with the chicken, add the pasta and the pesto sauce and toss to mix in the sauce.
