    Jons awesome pasta with Prosciutto

    List of Ingredients


    • 1 lb pasta (bow tie works good)
    • 1 bunch of asparagus
    • 1/3 - 1/2 lbs prosciutto ham (when you get it from the deli, it does NOT need to be super thin sliced)
    • 1 hunk of smoked mozzarella cheese
    • 1/2 bag of sun dried tomatoes
    • green peas
    • Olive oil


    Instructions


    1. Cut off the dry ends of the asparagus

    2. Blanch the asparagus (Steam for 2 minutes. Immediately remove and put in ice water to stop the cooking)

    3. Begin boiling the pasta

    4. While pasta is cooking, cut prosciutto into 1" strips

    5. Cut cheese into 1cm cubes

    6. In a large pan, heat olive oil (2-3 Tbsn) and sauté peas and asparagus for a couple minutes

    7. Add prosciutto and tomatoes, but don't sauté this for long (it gets tough and chewy if you do).

    8. When pasta is done, don't pour out into a strainer. Instead, removed with a slatted pasta spoon and place into a large bowl (don't worry if you get water in it, that's fine).

    9. Add cubed cheese and asparagus/peas/ham/tomatoes. Stir. The heat from the pasta will start to melt the cheese.

    10. While stirring, add about 1 cup of the pasta water leftovers. Stir. (this water is full of starches form the pasta, and will emulsify with the cheese to help make it saucy, rather then melted cheese).
