    List of Ingredients


    • 2 lbs dried red kidney beans.
    • 3-4 finely sliced cloves of garlic
    • 1/4 cup minced onion
    • 1 bunch parsley (chopped)
    • 3 lbs of good smoked sausage, cut into 2 inch lengths
    • salt and pepper to taste
    • 3 quarts of cold water


    Instructions


    1. Soak beans in water overnight.
    2. The next day, drain beans from water. Add beans to a large 8-10 quart pot. Add enough cold water to completely cover the beans. Add garlic and onion and bring to a boil.
    3. Cook 1 hour, then add parsley and sausage. Add more water if needed.
    4. Simmer for 2 more hours until beans are soft. Remove 2 cups of beans and mash up really soft, then return beans to the pot and stir into the mixture. Mix well.


    Final Comments


    Serve over rice with a salad and some french bread on the side. Tastes amazing, but makes a ton. I don't recommend freezing it, so just have some people over for dinner or something. :)
