    Seasame Zucchini Ribbons

    I think I got it off of the Ladies' Home Journal website or something like that.


    Recipe Introduction


    This makes a light and interesting side dish for a summer meal.


    List of Ingredients


    • 1 green zucchini
    • 1 yellow squash
    • 2 Tb vegetable oil
    • 3 Tb fresh lime juice
    • 1 Tb sesame oil


    Instructions


    1. Using a vegetable peeler, cut zucchini and squash lengthwise to form ribbons, discarding the seedy core of the squash.
    2. Heat 2 Tb of vegetable oil in pan over medium high heat until hot. Cook vegetables, tossing, about 1 minute.
    3. Transfer to a collander. Let stand 20 minutes to drain.
    4. Transfer to serving bowl. Toss with lime juice, sesame oil, and salt and pepper.
