Sugar Snap Peas, Tomato, and Feta Salad

List of Ingredients



• 6 tablespoons extra virgin olive oil
  
• 1 cup grape tomatoes
  
• 1/2 lb snow peas or sugar snap peas - strings discarded
  
• 3/4 lb feta
  
• 1/4 cup fresh mint leaves
  






Instructions



1. Heat oil over medium high heat and saute tomatoes and peas about 2 minutes.
   
2. Spoon mixture over feta and sprinkle with mint leaves.
