Wholesome Peanut Butter Cookies

1/2 cup packed brown sugar
1 cup sugar
2 cups quick cooking oats
1 cup plus 2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Recipe
Place brown sugar in 1-quart jar and press down evenly. Pour sugar over brown sugar and smooth top. Pour oats over sugar.
In small bowl, mix flour, baking powder, baking soda and salt. Pour half of mixture on oats and press down firmly. Add remaining flour mixture a little at a time, pressing down after each addition. Place lid on the jar.
Instructions for Baking:
2 eggs
1/2 cup crunchy or creamy peanut butter
3/4 cup (1 1/2 sticks) butter, softened
1 1/2 cups chocolate chips, optional
Preheat oven to 375 degrees.
Empty contents of jar into large bowl. Add eggs, peanut butter, and butter or margarine, softened. Also, if desired, stir in chocolate chips.
Beat on low speed to blend. Drop by heaping teaspoonfuls onto ungreased cookie sheet. Bake for 10 to 12 minutes or until edges are lightly browned.
Remove from oven and let cookies cool on cookie sheet for 1 minute before transferring to cooling rack. Makes 4 dozen.
