Runner's Pineapple Chicken
List of Ingredients
- 1 cup pineapple, crushed
- 1/4 cup soy sauce
- 1/2 Tbsp. wine vinegar
- 21/2 tsp. prepared mustard
- 1 tsp. ginger
- 4 chicken breasts, skinned and parboiled
- 1/2lb. mushrooms, sliced
- 1 green pepper, chunked
- 1 green onion, chopped
Instructions
- Cook first 5 ingredients on high heat to boiling point; set aside. Arrange chicken in a shallow baking dish. Pour sauces over chicken and coat all sides. Top chicken with vegetables and pour remaining sauce over chicken. Cover dish with foil. Bake in 350f oven for 30 minutes.
