Radically Easy Ribs
My guys really look forward to this "man dish" and I love it because there is almost no work! Yes, the ingredients really are this simple and flexible and you don't need to pre-boil the ribs. WARNING: This is definitely NOT a low-fat recipe. You can pre-boil the ribs to remove some fat and skim the sauce before serving, but it really doesn't reduce it by much.
List of Ingredients
- Rack of ribs (I prefer pork), any amount you want to serve
- Barbecue sauce (your favourite) - about 2 cups for every pound
Instructions
- Preheat oven to 400 degrees F. Cut the ribs apart along the bone to make serving size pieces.
- Line a baking dish with aluminum foil (makes cleanup easier). Pour some barbecue sauce on the bottom and spread out to make a thin layer.
- Place the ribs in the pan in a single layer. Pour barbecue sauce all over to cover rib surfaces thoroughly. If you have more ribs, you can make a second layer and pour over more barbecue sauce. (Note: The level of sauce in the pan is not important - making sure the meat is coated is!)
- Cover the pan with aluminum foil and SEAL TIGHTLY! This is the secret to fork-tender meat. Place in oven and bake for 1 hour. The time is estimated - check after about 45 minutes to make sure the sauce is not burning. Cook longer if necessary, but check every 15 minutes.
- Ribs are done when meat is pulling away from the bones and can be shredded with a fork.
Final Comments
Make sure you provide lots of napkins and fingerbowls of water! I usually serve this with rice to sop up the sauce. The guys don't feel the meal is complete unless they have corn on the cob too!
