    Cream Cheese Chicken

    Need a quick, delicious family meal or something mouthwatering and impressive for company that's easy to make lots of? This is the perfect recipe! Serves 4...but just multiply for as many as you want.


    List of Ingredients


    • 4 chicken breast halves, boneless & skinless
    • 1 cup all-purpose flour
    • Salt and pepper
    • Cooking spray
    • 1 can (10 oz) chicken broth
    • 1 package (8 oz) plain cream cheese, softened
    • 1/2 cup milk (approximate)


    Instructions


    1. Place flour in a shallow bowl or plate and mix in pepper to taste. Moisten chicken slightly with water. Press chicken into flour to lightly coat on all sides.
    2. Spray medium skillet with cooking spray. Brown chicken on all sides over medium-high heat just until outside is golden brown. (Chicken is NOT cooked at this stage!)
    3. Pour chicken broth into skillet over chicken and lower heat to medium. Cover tightly and simmer for approximately 20 minutes, or until juices no longer run pink when center of thickest pieces are cut.
    4. While chicken simmers, place softened cream cheese in a bowl. Using a little milk at a time, and pepper to taste, beat cream cheese until light and fluffy, with no (or few!) lumps. Be careful not to make the mixture too runny - it should hold its shape when spread.
    5. Preheat broiler. Place chicken breasts on rack in broiler pan. Spread cream cheese mixture over each chicken breast to cover completely about 1/4 to 1/2" thick. Broil until cheese just starts to brown.


    Final Comments


    This is delicious, and calorie-conscious if you use light cream cheese. Serve with rice or corn and green peas for a complete and nutritious meal!
