Recipe Introduction
Every year the Israel Family hosts a Garlic Festival on their Commune in Washington State. This was the first festival we went to after moving to that state and one we enjoyed going to every year until we moved. It is there that we learned to roast garlic.

Instructions
- Remove the papery outer covering of whole garlic heads, but do not separate the cloves or peel them. Place as many whole heads of garlic on a large square of heavy-duty aluminum foil as there are people to be served. Fold up the foil so that the cloves are completely wrapped.
- Bake in an oven preheated to 375 degrees F. for 1 hour and 15 minutes.
- To eat hold a clove over a piece of buttered bread and squeeze. The garlic puree will pop out like toothpaste from a tube.
