Pecan Bars

List of Ingredients
- 2 C. pecans, finely chopped and lightly toasted
- 1 1/2 C. self-rising flour
- 1/4 tsp. sea salt
- 1 1/2 dark brown sugar
- 1/2 C. sugar
- 1 C. vegetable oil
- 4 jumbo eggs
- 1 1/2 tsp. pure vanilla
Instructions
- Preheat oven to 350 degrees F. Lightly toast the chopped pecans and set aside. Sift flour and salt and set aside also.
- Mix together sugars, oil and eggs until creamy and yellow and then add vanilla. Add flour and then the pecans.
- Pour into a buttered 19x9 inch pan and bake for around 35 minutes. These are rich and chewy. If you let them cool and slice the bars and return them to a low oven to dry them out they make a wonderful Biscotti type of cookie.
