Banana Cake

List of Ingredients
- 1 C. unsalted, butter, softened
- 2 3/4 C. superfine sugar
- 3 jumbo eggs
- 3 C. unbleached flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. sea salt
- 3 bananas, ripe and mashed
- 2/3 C. buttermilk
- 1 T. pure vanilla
- 1 C. pecans, chopped
Instructions
- Cream butter; gradually add sugar, beating well with an electric mixer. Add eggs, one at a time, beating well after each one.
- Mix mashed banana and buttermilk together and set aside.
- Combine flour, baking powder, soda and salt; add to creamed mixture alternately with the mixture of banana, beginning and ending with the flour mixture. Mix well after each addition. Stir in vanilla and pecans.
- Spoon batter into 3 greased and floured 9 inch round cake pans. Bake at 325 degrees F. for approximately 30 to 45 minutes. Cake is done when a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove layers from pans and cool completely. Frost with chocolate buttercream or cream cheese frosting.
