Chocolate Banana Cake

List of Ingredients
- 2 oz. unsweetened chocolate, melted
- 1 C. unsalted butter, softened
- 2 3/4 C. superfine sugar
- 3 jumbo eggs
- 3 C. unbleached flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. sea salt
- 3 mashed bananas
- 2/3 C. buttermilk
- 1 T. pure vanilla
- 1 C. pecans, chopped
Instructions
- Melt chocolate squares in the microwave and set aside to cool.
- Cream butter; gradually add sugar, beating well with a mixer. Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt; add to creamed mixture alternately with banana, buttermilk and melted chocolate, beginning and ending with flour mixture. Mix well after each addition. Stir in vanilla and pecans.
- Spoon batter into 3 greased and floured 9 inch round cake pans. Bake at 350 degrees F. for 30 minutes or until a wooden pick inserted into center comes out clean. Cool in pans 10 minutes; remove layers from pans and let cool completely. Frost with chocolate buttercream frosting.
