Apple Cider Cookies

These cookies don't need icing. They are over the top good either way.
List of Ingredients
- 1/2 C. Butter, softened
- 2/3 C. Sugar
- 2/3 C. Brown sugar, packed
- 1 lrg egg
- 1/4 C. Apple juice
- 1 tsp. Apple flavoring
- 2 1/4 C. Flour, all-purpose
- 2 tsp. Apple pie spice
- 1/4 tsp. Baking soda
- 1 C. Granny Smith apple, finely chopped and tight
- 1 C. Walnuts, chopped
- ICING
- 1/4 C. Butter, softened
- 3 C. Powdered sugar
- 1 tsp. Vanilla extract
- 1 tsp. Apple flavoring
- 1 tsp. Apple pie spice
- 3-4 T. Apple juice
Instructions
- Preheat oven to 350 degrees F. and parchment line the baking sheets.
- Cream together butter and sugars until very well blended. Add egg, apple juice and apple flavoring.
- Mix together dry ingredients and carefully add to creamed mixture.
- Gently stir in apples and walnuts. Chill dough for a wee bit and keep in the icebox in between batches. Drop by spoonfuls onto cookie sheets and bake for about 15 minutes. Bake just until the look set, without any shinny bits. Leave in longer for a crisper cookie.
- Mix together icing ingredients with enough apple juice to make it nice and fluffy. Ice cooled cookies.
