Blueberry Cookies

List of Ingredients
- 3 C. unbleached flour
- 1 T. baking powder
- 3/4 tsp. sea salt
- 1/2 C. unsalted butter
- 1/4 C. Crisco
- 1 1/2 C. superfine sugar
- 2 jumbo eggs
- 1/3 C. milk
- 1 1/2 C. fresh blueberries
- 3 T. pecans, chopped
- 2 tsp. grated lemon rind
Instructions
- Combine flour, baking powder and sea salt and set aside.
- Cream butter, shortening and sugar until light and fluffy. Add eggs and blend well. Add flour a bit at a time alternately with milk, beginning and ending with flour. Fold in remaining ingredients.
- Form into balls a bit bigger than an inch and place on a baking sheet. Bake at 375 degrees F. for about 10 minutes or until lightly browned. Cool on a wire rack.
Final Comments
These can also be made by using fresh black berries or raspberries in place of the blueberries.
