Huge Oatmeal Raisin Cookies

List of Ingredients
- 2 1/2 C. unsalted butter
- 2 2/3 C. superfine sugar
- 1 1/3 C. + 3 1/2 T. brown sugar
- 6 jumbo eggs
- 1 tsp. pure orange extract
- 6 1/3 C. unbleached all purpose flour
- 1 T. + 1 tsp. baking soda
- 1 T. cinnamon
- 15 ounces raisins
- 5 1/3 C. rolled oats
- 1/3 C. light molasses
Instructions
- Combine flour, baking soda and cinnamon and set aside.
- In a very large bowl cream together butter and sugars. Add eggs and orange extract. Beat till light and fluffy. Add the dry ingredient mixture and mix thoroughly. Stir in raisins, oats and molasses stirring until raisins are evenly distributed. Cover and chill. Stick cookie sheets in refrigerator.
- Preheat oven to 300 degrees F. Spray cookie sheet with cooking spray. Drop dough in mounds. Bake on bottom shelf of oven for 12 minutes or until cookie spreads to it's full diameter. Rotate sheet to top oven shelf. Continue to bake approximately 18 to 20 minutes or until centers of cookies are baked through. Cool completely on racks or for at least 15-20 minutes.
Final Comments
Dough must remain cold until it goes into the oven. Cookie sheets must also be kept chilled.
