    Maggie's Peanut Butter Cookies

    We first made these at Uncle Tony's house in Tucson during Litha.









    List of Ingredients


    • 2 C. quick oats
    • 1 1/4 C. unbleached flour
    • 1 tsp. baking powder
    • 1 tsp. baking soda
    • 1/4 tsp. sea salt
    • 1 C. Crisco
    • 1 C. creamy peanut butter
    • 2 tsp. pure vanilla
    • 1 C. superfine sugar
    • 1 C. brown sugar, packed
    • 2 jumbo eggs
    • 1 C. milk chocolate chips
    • 1 C. chopped pecans


    Instructions


    1. Mix together dry ingredients and set aside. In a large bowl cream Crisco and sugars. Add eggs and vanilla. When well mixed slowly add dry ingredients. Blend well. Stir in chocolate chips and pecans.
    2. Drop onto un-greased cookie sheet by rounded spoonfuls and bake at 350 degrees F. in a preheated oven for 12 minutes or until golden. Cool on cookie sheet as these cookies set up as they cool.
