Maggie's Peanut Butter Cookies

We first made these at Uncle Tony's house in Tucson during Litha.
List of Ingredients
- 2 C. quick oats
- 1 1/4 C. unbleached flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. sea salt
- 1 C. Crisco
- 1 C. creamy peanut butter
- 2 tsp. pure vanilla
- 1 C. superfine sugar
- 1 C. brown sugar, packed
- 2 jumbo eggs
- 1 C. milk chocolate chips
- 1 C. chopped pecans
Instructions
- Mix together dry ingredients and set aside. In a large bowl cream Crisco and sugars. Add eggs and vanilla. When well mixed slowly add dry ingredients. Blend well. Stir in chocolate chips and pecans.
- Drop onto un-greased cookie sheet by rounded spoonfuls and bake at 350 degrees F. in a preheated oven for 12 minutes or until golden. Cool on cookie sheet as these cookies set up as they cool.
