List of Ingredients



• 1 C. unsalted butter
  
• 1 1/2 C. superfine sugar
  
• 1 C. cottage cheese, small curd
  
• 2 jumbo eggs
  
• 1 tsp. pure vanilla
  
• 1 tsp. baking powder
  
• 1/2 tsp. soda
  
• 1/4 tsp. sea salt
  
• 2 tsp. cinnamon
  
• 2 C. unbleached flour
  
• 1 C. raisins
  
• 1/2 C. nuts
  
• 2 C. quick oatmeal
  
• additional sugar
  






Instructions



1. Preheat oven to 375 degrees F.
   
2. Cream together butter and sugar. Add cottage cheese, vanilla and eggs. Mix well. Stir in baking powder, soda, salt, cinnamon and flour. Add oatmeal, raisins and nuts. Stir until well blended. Roll dough into balls. Dip in sugar. Bake 10 to 15 minutes.
