Orange Pumpkin Cookies

List of Ingredients
- 2 1/2 C. unbleached all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1/2 tsp. cinnamon
- 1/2 tsp. pumpkin pie spice
- 1/2 C. old fashioned oats
- 1 C. unsalted butter
- 1 C. super fine sugar
- 1/2 C. light brown sugar, packed
- 1 jumbo egg
- 15 oz. can pumpkin
- 2 T. orange juice
- 1 tsp. orange extract
- 1 tsp. orange peel, grated
- 1/2 C. pecans, chopped
- Citrus Glaze, oragne
Instructions
- Preheat oven to 375 degrees F. Combine flour, soda, sea salt, cinnamon, pumpkin pie spice and oats. Set aside.
- Cream butter and sugars. Beat in all remaining ingredients except for the nuts. Gradually add dry mixture and stir in nuts. Bake on an un-greased cookie sheet for 15 minutes at 375 degrees. Cool an top with Citrus Glaze.
- CITRUS GLAZE: Mix until smooth 2 C. powdered sugar,1 tsp. grated orange peel, 1 tsp. pumpkin pie spice, 1 tsp. orange extract, 1 tsp. vanilla extract, 3 T. softened unsalted butter, 1 T. canned pumpkin and 1-3 T. orange juice. Add juice a bit at a time until desired consistency. If too runny add more powdered sugar.
