Pumpkin Drop Sugar Cookies

- 1/2 C. unsalted butter, softened
- 1/2 C. vegetable oil
- 1/2 C. pumpkin, canned
- 1 C. sugar, granulated
- 1/2 C. powdered sugar
- 1 tsp. vanilla
- 2 eggs, large
- 4 C. flour, all-purpose
- 1/4 tsp. cream of tartar
- 1/2 tsp. sea salt
- 1 1/2 tsp. pumpkin pie spice
- pinch cloves, ground
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, stir butter, oil, pumpkin, sugars, vanilla and eggs together until incorporated and smooth. Slowly mix in all dry ingredients until completely incorporated. Using a spoon scoop out dough and roll into balls. Place onto parchment lined baking sheets and flatten to 1/2 inch thick using the bottom of a glass that is dipped often into sugar. Bake 8-9 minutes, making sure bottoms are golden. Frost with Pumpkin frosting.
