Pumpkin and Chips Cookies

List of Ingredients
- 1 C. unsalted butter, softened
- 3/4 C. brown sugar, packed
- 3/4 C. superfine sugar
- 1 jumbo egg
- 2 tsp. pure vanilla
- 2 C. unbleached flour
- 1 1/2 C. old fashioned oats
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. pumpkin pie spice
- 1 C. pumpkin, canned
- 1/2-3/4 C. chocolate chips, semi-sweet, milk chocolate or white.
Instructions
- Preheat oven to 350 degrees F. Cream together butter and sugars. Beat in egg and vanilla. Combine dry ingredients and add to butter mixture alternately with pumpkin, ending with pumpkin. Fold in chips. Drop by tablespoonfuls onto greased, parchment lined cookie sheet and bake for 13 minutes.
Final Comments
These can also be made into muffins by filling greased muffin tins 3/4 full. Bake until lightly browned.
