Texas Peanut Butter Cookies

- 3/4 C. peanut butter
- 1/2 C. unsalted butter, softened
- 1 C. light brown sugar, packed
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 large egg
- 3 tsp. pure vanilla
- 1 1/4 C. unbleached flour
- 2 1/5-3 C. miniature peanut butter cups, quartered
Instructions
- Cream peanut butter and butter with sugar. Add baking powder and soda and mix well. Beat in egg and vanilla. Beat in flour at low speed just until combined, don't over mix. Stir in peanut butter cups. Refrigerate for at least an hour.
- Form dough into 1-inch balls and flatten to 1/4-inch thickness. Bake on an un-greased cookie sheet at 375 degrees F. for 10 minutes. Cool on wire rack.
