Very Bananaful Cookies

Recipe Introduction
These cookies have so much banana flavor. They are very good.
List of Ingredients
- 1 C. unbleached all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 2 T. unsalted butter, softened
- 1/2 C. superfine sugar
- 1/2 C. light brown sugar, packed
- 1/4 C. very ripe banana, mashed
- 1 jumbo egg
- 1 tsp. pure vanilla
- 1/2 tsp. banana extract, optional but worth the addition
- 1 1/2 C. oats
- 1 C. milk chocolate chips
Instructions
- Combine flour, sea salt, baking powder and soda, set aside.
- Cream butter and sugars. Beat in banana, egg, vanilla and banana extract. Gradually add flour mixture and then stir in oats and chocolate chips.
- Drop by teaspoonfuls onto parchment covered cookie sheets and bake at 350 degrees F. for 11-14 minutes. Cookies will be set and lightly browned. Remove from oven and let set on cookie sheet for 5 minutes before removing to a wire rack to finish cooling.
Final Comments
These cookies are good with or without chocolate chips. Chocolate-peanut butter chips or chocolate-caramel chips are wonderful substitutions.
