    List of Ingredients


    • 3 C. uncooked Rainbow Rotini, tri-colored spiral pasta
    • 1 lb. lean ground beef
    • 1 1/2 C. frozen corn
    • 2 fresh poblano chilies, seeded and chopped
    • 1 tsp sea salt
    • 1/4 tsp cumin
    • 1 C. Monterrey Jack cheese, shredded
    • 8 oz. sour cream
    • 1/2 C. milk


    Instructions


    1. Cook pasta till just done. Drain and keep warm.
    2. Brown ground beef and drain. Put back into pan and add corn, poblano chilies, salt and cumin. Mix well and cover. Cook over a medium heat until chilies are just tender.
    3. Combine pasta, meat mixture, sour cream, cheese and milk. Cook until completely heated.
