    Beef and Spinach Enchiladas

    List of Ingredients


    • 1 lb. lean ground beef
    • 3 cloves garlic, minced
    • 3 cloves garlic, minced
    • 1 3/4 C. frozen chopped spinach
    • 4 oz. cream cheese
    • 3/4 tsp. cumin
    • 3/4 C. fresh roasted green chili
    • 1/4 C. onion, chopped
    • 2 C. Monterrey Jack cheese, shredded
    • flour tortillas
    • 1 C. fresh salsa
    • 1 C. enchilada sauce


    Instructions


    1. Cook and drain the ground beef and garlic. Add spinach and cook for about 5 minutes. Add chilies, onions, cream cheese, cumin,and 1 1/2 C. shredded cheese. Cook until cheeses are melted.
    2. Combine enchilada sauce and salsa.
    3. Roll mixture in flour tortillas and place seam side down in a greased baking dish. Top with sauce mixture.

    4. Sprinkle remaining shredded cheese on top and bake at 350 degrees F. for 20 to 25 minutes.
