Beef and Spinach Enchiladas

- 1 lb. lean ground beef
- 3 cloves garlic, minced
- 3 cloves garlic, minced
- 1 3/4 C. frozen chopped spinach
- 4 oz. cream cheese
- 3/4 tsp. cumin
- 3/4 C. fresh roasted green chili
- 1/4 C. onion, chopped
- 2 C. Monterrey Jack cheese, shredded
- flour tortillas
- 1 C. fresh salsa
- 1 C. enchilada sauce
Instructions
- Cook and drain the ground beef and garlic. Add spinach and cook for about 5 minutes. Add chilies, onions, cream cheese, cumin,and 1 1/2 C. shredded cheese. Cook until cheeses are melted.
- Combine enchilada sauce and salsa.
- Roll mixture in flour tortillas and place seam side down in a greased baking dish. Top with sauce mixture.
- Sprinkle remaining shredded cheese on top and bake at 350 degrees F. for 20 to 25 minutes.
