Nomad's Lasagna

List of Ingredients
- 6 lasagna noodles, cooked
- 2 C. mozzarella cheese, shredded
- 1/2 lb. bulk Italian sausage
- 1/2 C. onion, chopped
- 4 oz. can mushroom pieces and stems, drained
- 1 1/2 C. chicken, cooked and finely chopped
- 16 oz. jar spaghetti sauce
- 15 oz. ricotta cheese
- 9 oz. pkg. frozen chopped spinach, thawed and squeezed
- 1/2 C. grated Parmesan cheese
- 2 eggs, beaten
Instructions
- Heat oven to 350 F. Lightly grease 12x8 inch (2 qt.) baking dish. In medium skillet, brown sausage and onion, breaking sausage into small pieces. Remove from skillet, drain on paper towel. In large bowl combine sausage mixture, mushrooms, chicken and spaghetti sauce; mix well.
- In small bowl combine remaining ingredients except the mozzarella cheese; mix well.
- In greased dish layer 1/2 of the cooked noodles. Top with 1/2 of the meat mixture and then 1/2 of the cheese mixture and 1/2 of the mozzarella cheese. Repeat layers ending with mozzarella cheese on top. Bake at 350 F. for 30 to 35 minutes or until hot and bubbly. Let stand 10 to 15 minutes before serving.
