Recipe Introduction
It seems like this recipe has a lot of cheese. It is, but to make it taste as it should it really does need it.
List of Ingredients
- 2 cans Albacore tuna, water packed and drained
- 3 large celery stalks
- 3 large pickles
- 1 large green bell pepper
- 3 boiled eggs
- 1/2 large onion
- 1 lb. mild cheddar cheese
- 1 lb. Colby cheese
- mayonnaise
- sea salt/pepper
Instructions
- Finely chop all the vegetables and mix in a large bowl. Add tuna and mix. With a fork mash eggs until there are no large to medium pieces left. Add to tuna mixture. Add enough mayonnaise to the mixture to make it very moist. Grate cheese with a fine grater and add to the tuna. Season to taste with salt and pepper.
Final Comments
Use as filling for tacos, burritos or sandwiches. Use as dip with chips or vegetables. Serve on a bed of lettuce or in a bell pepper.
