Patricia's Pecan Delight Pie

- 3 egg whites, beaten
- 1 C. superfine sugar
- 1/2 tsp baking powder
- 1 tsp. vanilla
- 22 Ritz crackers, crushed
- 3/4 C. pecans, crushed
Instructions
- Beat egg whites until foamy; mix in sugar and beat until stiff. Add baking powder. Stir in crackers, pecans and vanilla. Mix well. Pour into a greased 8-inch pie pan. Bake for 30 minutes at 325 degrees F. When cool top with Cool Whip and keep refrigerated.
