    List of Ingredients


    • 2 C. unbleached all-purpose flour
    • 1 tsp. baking soda
    • 1/4 tsp. sea salt
    • 1 tsp. cinnamon
    • 1/2 C. unsalted butter, softened
    • 3/4 C. brown sugar
    • 2 jumbo eggs, slightly beaten
    • 2 1/3 C. mashed banana
    • 2 tsp. pure vanilla
    • 8 oz. can pineapple, crushed and squeezed dry
    • 1 C. dates or raisins
    • 1/2 C. chopped nuts


    Instructions


    1. Cream together butter and sugar. Mix in eggs, banana, pineapple and vanilla until well mixed. Sift together dry ingredients and stir into banana mixture just until moisten, add dates or raisins if desired. Do not over mix. Pour into prepared loaf pans and bake at 350 degrees F. for about an hour or until loafs pick test done.
