Zucchini-Banana Bread

List of Ingredients
- 3 lrg eggs
- 1 C. vegetable oil
- 3 tsp. pure vanilla
- 2 C. zucchini, grated and squeezed
- 1 C. banana, mashed
- 1/2 C. superfine sugar
- 1 C. brown sugar, packed
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. cloves
- 1 tsp. sea salt
- 1/2 tsp. nutmeg
- 3 C. unbleached flour
- 1 C. pecans or walnuts chopped
Instructions
- Mix together eggs, oil and vanilla. Stir in zucchini, banana and sugars. Sift together remaining ingredients and add to wet then stir in nuts. Bake in 2 greased and floured loaf pans at 350 degrees for about an hour.
