    List of Ingredients


    • 3 large eggs
    • 1 lb can pumpkin
    • 3/4 C. vegetable oil
    • 1/2 C. water
    • 2 1/2 C. unbleached flour
    • 2 1/4 C. superfine sugar
    • 1 1/2 tsp. baking soda
    • 1 1/4 tsp. sea salt
    • 3/4 tsp. nutmeg
    • 3/4 tsp. cinnamon
    • 1/2 C. raisins
    • 1/2 C. pecans, chopped


    Instructions


    1. Mix together in a very large bowl eggs, pumpkin, oil and water. Set aside.

    2. Mix together flour, sugar, baking soda, salt, nutmeg and cinnamon. Add to wet mixture. Stir until mixed will. Add raisins and pecans.
    3. Bake in a loaf pan at 350 degrees F. for 1 hour. Drizzle top with powdered sugar and water mixture.
