Lughnasadh-Corn Cookies

- 1 lb. Crisco
- 1 3/4 C. sugar
- 4 jumbo eggs
- zest of 2 oranges
- 1 T. pure vanilla
- 2 lb. Maseca
- 3 T. baking powder
- 1 1/2 tsp. ground cinnamon
- 1 tsp. all-purpose flour
Instructions
- Preheat the oven to 350 degrees F
- Cream Crisco and sugar together in a large bowl. Add eggs, orange zest, and vanilla. Combine Maseca, baking powder, cinnamon, and flour in another bowl. Stir and add 1/2 of the mixture to the shortening mixture. Beat on low speed until combined. Add the remaining flour mixture and knead with your hands until dough is combined.
- Roll a small portion of the dough into a thin log; pinch ends together to form a small ring. Place on a baking sheet. Repeat with the rest of the dough. Place the cookies closely together and bake. They won't spread. Bake until golden brown, about 45 minutes. Remove and let cool.
