Lughnasadh-Corn Fritters

List of Ingredients
- 2 eggs, beaten
- 2 1/2 C. all purp flour
- 2 tsp. baking powder
- 1 tsp. sea salt
- 3/4 C. milk
- 2 T. butter, unsalted, melted
- 1 can creamed corn
- oil for frying
- maple syrup for dressing, opt.
Instructions
- Mix all together and drop by small spoonfuls into heated frying oil. fry 2-3 minutes per side until golden brown. Drain on paper towels. Serve hot and drizzled with maple syrup or powdered sugar or both.
