Fried Green Tomatoes

List of Ingredients
- 4 lrg. green tomatoes, cut 1/4 inch thick
- 1/4 C. superfine sugar
- 3/4 C. unbleached flour
- 1 tsp. sea salt
- 1/8 tsp. pepper
- 3 T. bacon drippings
- 6 T. oil
Instructions
- Stack tomato slices on a plate sprinkling each layer with sugar. Let it rest for about 45-60 minutes.
- Combine all dry ingredients in a bowl. Drain tomatoes and dredge in flour mixture.
- Heat 1 tablespoon of the drippings and 2 tablespoons of the oil. When hot start frying the tomatoes a few at a time. Add dripping/oil mixture when needed to continue frying until all tomatoes are done. Drain on a paper towel after frying. Sprinkle with finishing salt.
