    Hot German Potato Salad

    Recipe Introduction


    I first made Kartoffelsalat for while I was in German class in High School.


    List of Ingredients


    • 5 slices very thick bacon, diced and cooked until crisp
    • 2 T. bacon drippings
    • 1 1/2 T. unbleached flour
    • 1 T. sugar
    • 1 tsp. sea salt
    • 1 T. yellow mustard
    • 1/2 C. apple cider vinegar
    • 1/2 C. water
    • 4 C. potatoes, sliced and cooked


    Instructions


    1. Cook bacon and set aside. Heat bacon dripping. Add to heated drippings, flour, sugar, sea salt and mustard. When mixed add water and vinegar slowly to flour mixture. Stir constantly until smooth. Cook over low heat until thickened. Remove from heat and add potatoes. Mix well and stir in bacon bits.
