Sourdough Apple Carrot Bread

List of Ingredients
- 1 C. active sourdough starter
- 2/3 C. superfine sugar
- 1/4 C. unsalted butter, melted
- 2 jumbo eggs
- 2 tsp. pure vanilla
- 1 C. granny smith apple, unpeeled and shredded
- 1/2 C. carrot, shredded
- 1 tsp. ground cinnamon
- 1 tsp. apple pie spice
- 1 tsp. baking powder
- 1/2 tsp. sea salt
- 1 3/4 C. unbleached flour
- 1/2 C. pecans, chopped
- 1/2 C. coconut
Instructions
- Mix everything together and and pour into a 9x5 inch loaf pan. Let rest 15 minutes then bake at 350 degrees F. for 60 minutes or until toothpick comes out clean.
