    Sourdough Carrot Zucchini Cake

    List of Ingredients


    • 2 C. active sourdough starter
    • 2 C. unbleached flour
    • 3 jumbo eggs
    • 2/3 C. oil
    • 1/2 tsp. sea salt
    • 1 tsp. baking soda
    • 2 tsp. baking powder
    • 2 tsp. ground cinnamon
    • 1 tsp. pie spice or 1/2 tsp. nutmeg and a scant 1/4 tsp. ginger
    • 1/4 C. pecans, chopped
    • 1/4 C. raisins
    • 1 1/4 C. zucchini, shredded with peel
    • 1 1/4 C. carrot, shredded


    Instructions


    1. Using a wooden spoon mix together all ingredients except nuts, raisins, zucchini and carrots.
    2. Fold in remaining ingredients and pour into a well greased bundt pan or two greased 9x5 loaf pans and let rest 15 minutes.
    3. Bake at 350 degrees F. for 60 minutes or until toothpick comes out clean. Remove from pan and cool.
