Sourdough Carrot Zucchini Cake

List of Ingredients
- 2 C. active sourdough starter
- 2 C. unbleached flour
- 3 jumbo eggs
- 2/3 C. oil
- 1/2 tsp. sea salt
- 1 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. pie spice or 1/2 tsp. nutmeg and a scant 1/4 tsp. ginger
- 1/4 C. pecans, chopped
- 1/4 C. raisins
- 1 1/4 C. zucchini, shredded with peel
- 1 1/4 C. carrot, shredded
Instructions
- Using a wooden spoon mix together all ingredients except nuts, raisins, zucchini and carrots.
- Fold in remaining ingredients and pour into a well greased bundt pan or two greased 9x5 loaf pans and let rest 15 minutes.
- Bake at 350 degrees F. for 60 minutes or until toothpick comes out clean. Remove from pan and cool.
