    Sourdough Chocolate Cake

    List of Ingredients


    • 4 oz. baking chocolate
    • 1/2 C. water
    • 1 tsp. baking soda
    • 1 C. unsalted butter, softened
    • 2 C. superfine sugar
    • 4 jumbo eggs
    • 4 tsp. pure vanilla
    • 1 C. pecans, chopped
    • 1 1/2 C. unbleached flour
    • 1 1/2 C. active sourdough starter


    Instructions


    1. In a small pan melt chocolate in the water. Stir constantly and bring to a boil. Remove from heat and add baking soda, stirring constantly. Mixture will foam and not smell terribly good. Let mixture cool.
    2. Cream butter and sugar. Add eggs one at a time beating well after each addition. Add vanilla and chocolate mixture. Add nuts, flour, sea salt and sourdough starter. Mix well and pour into a greased 9x13 inch pan. Let cake set for 30 minutes.

    3. Bake at 350 degrees F. for about 40 minutes or until toothpick comes out clean.


    Final Comments


    I like to add 2 teaspoons of cinnamon and a dash of cloves to this cake for a change of taste.

    I also like to make it by reducing the vanilla by 2 tsp. and adding 2 tsp. of almond or orange.
