    Giant Peanut Butter cup Cookies

    1/2 cup butter
    3/4 cup sugar
    1/3 cup creamy or crunchy peanut butter
    1 egg
    1/2 tsp vanilla
    1 1/4 cup flour
    1/2 tsp baking soda
    1/4 tsp salt16 Reese Peanut Butter Cups, quartered

    Heat oven to 350F

    Beat together Butter, sugar and peanut butter until creamy. Add egg and vanilla. Stir together flour baking soda and salt. Add to creamy mixture and blend well. drop dough by level 1/4 cup measurements onto ungreased baking sheet. approx 3 cookies per sheet(the cookies will spread) Push about 7 peices of peanut butter cups into the cookies. Bake for 15-17 minutes or until lightly golden brown around the edges. Centers will be pale and soft. Cool for 1 minute on cookie sheet then remove to wire rack to cool completely.
