    List of Ingredients




    2 cups chicken broth (can use beef broth)
    1 package (10 oz) frozen leaf or chopped spinich, or 1 bunch (12 oz) fresh spinach
    6 oz cream cheese with herbs, cubed
    Sour cream
    Parsley

    Recipe



    In saucepan, bring broth to boil. If using frozen spinach, break into four pieces and place in broth. (If using fresh spinach, trim stems and discard.) Return to boil, stirring occasionally. Simmer for 2 minutes. Carefully pour into blender or food processor fitted with steel blade. Add cream cheese and process until smooth. Pour into warm soup bowls and garnish with dollops of sour cream and chopped parsley.

    Can also be served well chilled.
