List of Ingredients
2 C. Sugar
2 C. flour
2 tsp. soda
2 tsp. cinnamon
2 tsp. salt
1 ½ C. oil
4 eggs
3 C. grated carrots
1 C. nuts (opt.)
Recipe
Combine all ingredients & mix well. Pour into tube pan, or 9 x 13 pan. Bake at 325º for 50 minutes for flat pan, 1 hr. for tube pan.
Icing
1 stick butter
1 – 8 oz. pkg. crm. Cheese
1 box powdered sugar
3 tsp. vanilla or lemon
Combine & beat until smooth. Frost & top w/ chopped nuts. (note – ½ of icing recipe is enough)
