Peanut Brittle

Mom & Dad
1 ½ C. white sugar
1 C. white karo
Cook until it starts to bubble
Add:
2 C. raw peanuts &
1 tsp. salt
Boil until it’s a light amber color (Boil pretty hot – Mom sets her stove on about 8 for about 7-8 minutes – my stove on 6 – 6 ½ & boil about 7 minutes)
Take off burner & add:
2 tsp. baking soda
Stir until it bubbles & soda mixes in (Mom said maybe about ½ minute – if that) Pour onto a greased cookie sheet, or buttered Reynolds wrap. Do not spread with a spoon, just let it pour out into the pan. Mom said it works better to have 2 people to pour b/c you have to do it so fast, or it won’t be as light – one to hold the pan & one to scrape it out
