Smoked Sausage Skillet Dinner

2 ¼ C. (9 oz.) elbow macaroni, uncooked
1 (14 oz.) pkg. Healthy Choice low fat smoked sausage
1 C. chopped onion
½ C. sliced celery
½ c. chopped green pepper
1 ½ tsp. vegetable oil
1 (14 ½ oz.) can no salt added stewed tomatoes, undrained & chopped
1 tsp. chili powder
¼ tsp. ground pepper
½ C. (2 oz.) Healthy Choice fat free cheddar cheese
Recipe
Cook macaroni according to package directions, omitting salt & fat. Drain well & set aside.
Cut sausage into ¼” thick slices. Cook sausage & next 3 ingred. In oil in a large, deep, nonstick skillet over medium heat 8 minutes or until sausage is lightly browned & vegetables are tender, stirring occasionally.
Add macaroni, tomatoes, chili powder, & ground pepper; stir well. Cook, uncovered, 4 minutes or until mixture is thoroughly heated, stirring frequently.
Sprinkle cheddar cheese evenly over sausage mixture, and cook uncovered, until cheddar softens, stirring occasionally. Serve imediately.
